6 MEDIUM POTATOES, BOILED & CHOPPED

4 HARD COOKED BOILED EGGS

½ C. CHOPPED BELL PEPPER

1 SMALL ONION, CHOPPED

¼ – ½ C. SWEET PICKLE RELISH

1 TSP. CELERY SEEDS

1 T. LEMON JUICE

SALT & PEPPER

1 TSP. SUGAR

1 (2 OZ.) JAR DICED PIMENTO, DRAINED

2 T. MUSTARD

2/3 C. MAYONNAISE OR MIRACLE WHIP

WASH POTATOES AND COOK IN BOILING SALTED WATER TO COVER, 30 MINUTES OR UNTIL TENDER.  DRAIN AND COOL COMPLETELY, PEEL AND CUBE POTATOES.  COMBINE POTATOES AND REMAINING INGREDIENTS AND TOSS GENTLY.  COVER AND CHILL THOROUGHLY.
